Today is a lucky day! Raw food blogger, marathoner, and all time beautiful lady (and a great friend of mine) Elizabeth, over at Adventures with Veggies, put together a whole day of meals for busy people on the go.  I admitted to her that I forget to eat healthy (or at all) especially on wedding days because I get preoccupied and don’t know how to plan portable meals.  SO, she specifically planned foods for a wedding photographer on a wedding day- foods that are healthy and easily transportable! Not only that, but they are gluten-free and vegan!

Morning Smoothie

Quinoa Salad

Mid-Afternoon Mango

Here are the recipes!!

Morning Smoothie:
2 bananas
6 strawberries
1 golden delicious apple
2 tbsp. chia seeds
1 cup coconut water
1/2 cup fresh orange juice
1/2 cup chopped spinach

Quinoa Salad:
Fill a large mason jar with layers of…
quinoa (with a little sea salt and pepper)
red grapes (halved)
cherry tomatoes (halved)
avocado slices
finely chopped kale
slice of red onion
sprouts
squeeze lemon juice on top

Agave Toasted Almonds:
handful of almonds (sprouted and dehydrated if possible)
coat with 2 tbsp. raw agave and a pinch of cayenne
lightly toast in a saucepan on medium heat for a few minutes until warm.
sprinkle a pinch of sea salt on top and let cool

Mid-Afternoon Mango:
1 mango
handful of cilantro
1/2 red pepper
1/2 cucumber
slice of white onion
dice all ingredients and mix together, top with lime juice

Throughout the day, drink lots of water or coconut water to stay hydrated!
